Apple Cobbler
Ingredients:
Filling:
12 organic Envy apples
3 tbsp Lemon juice (about 1.5 lemons)
3 teaspoons vanilla
1/3 cup coconut sugar
1.5 tsp cinnamon
salt (to taste - roughly a pinch)
Crumb Topping:
15 tbsp grass fed butter
1.5 cups Bob’s Red Mill All Purpose Gluten Free Flour
1.5 cups gluten free oats
1.5 cups coconut sugar
1.5 tsp organic cinnamon
1/2 tsp organic nutmeg
Directions:
Preheat oven to 350 degrees F
Skin all apples
Cut apples into thin slices
Add apples to a large mixing bowl and add lemon juice, vanilla, coconut sugar, cinnamon, and salt
Set aside apple mixture
With a Kitchen Aid, add butter, flour, gluten free oats, coconut sugar, cinnamon, and nutmeg into a mixing bowl
Using Kitchen Aid, knead the mixture into a dough consistency. May need to add more butter to get it to be a doughy texture.
In a large oven safe pan, add apple mixture to the pan. Top with the crumble/doughy topping to cover the mixture evenly.
Bake in the oven for 20-30 minutes or until the topping is golden brown.
Take out of oven and let cool for a few minutes before serving.
